Check with the store for hours for pickup. Then you drop them off. They give you a receipt and you list what you donated and what it is worth. They can not put a value on it. It helps if you have a source for the value, like ebay or similar places that sell used stuff.
On your tax return, you list it under charitable contributions.

When you drop the stuff off, ask for a receipt. My Goodwill does not even bother to fill it out. They just let you fill in what categories and how many bags/boxes you gave.
